What would Subway 'paperwork' entail?

I was reading a job application for Subway and it said that the job included daily paperwork? I just can't understand how a sandwich company could have that much paperwork for someone who puts together bread and stuff? Obviously I know the job also has more aspects about things like cleaning etc... but still, anyone who has worked in Subway, the daily paperwork is what?What would Subway 'paperwork' entail?
If you're just a clerk, you'll probably only have to fill out a temperature log

(health code reasons), bread count sheet (the prevent food theft), and the cash in/out form (counting money in the drawer, generally done on computer).
